Fun Food Friday

Nacho!
Ok I have to admit Nacho Libre is one of my Hubby's favorite movies, so much so that it is quoted in my home every time I turn around. I think that he secretly wanted to be a luchador when he was a kid or something. I know he has admited to going and watching them at a local ring when he was a child.

All of this to say that today I have a recipe for NACHOS.



1 1/2 pounds chicken breast
1/2 teaspoon of minced garlic, salt and black pepper
1 pound peeled, diced, cooked chorizo
10 cups corn chips
6 cups shredded Monterey Jack cheese
1 1/2 cups diced tomatoes
1 cup sliced jalapeno peppers
1 cup sour cream
Red sauce:
8-ounce can of tomatoes
2 tablespoons chopped white onion
1 garlic clove
Salt to taste

 Season chicken breast with garlic, salt and black pepper marinade over night. Cook chicken using desired method, I chose to shred chicken,some may prefer chicken strips.
 To make the sauce:
blend the can of tomatoes, onion and garlic clove. Place mixture in a saucepan and bring to a boil. Add salt to taste.
Place the corn chips (I used locally made tortilla chips) chips on baking dish. Add the chicken and chorizo on top of the chips and cover with the shredded cheese.
Put in oven, uncovered, for 5 minutes or until cheese is melted. Remove from the oven and top with diced tomatoes, jalapeno pepper and sour cream. Add red sauce on top to taste.
Sorry about the slight shadow on the photo.But aren't these nachos pretty?

My family enjoyed these nachos, while quoting you guessed what movie.
The meal was very filling and full of flavor.

Hidden Mickey?


So once again a "not so Hidden Mickey" appeared at the dinner table.
This was dinner that I cooked last Thursday.
My mother asked me to make meatloaf, My husband said "Eeww meatloaf"
So I decided to make it a bit fun, jazz it up a bit.
Why not?
So people who live in my house seem to think I am crazy, but I don't mind, it comes natural to me.
And because the "artsy" me cannot seem to copy a recipe to a T. I have taken a picture of the recipe card for you, so if you feel the need to deviate from the "Original" you may.

Everyday food with a little scoop of fun

This is a family staple.
we call it "hamburger, green bean, mash potato"
It is a Shepard's pie of sorts.
I was forced to grind the bell pepper and the onion into a paste to add it in when the beef was cooking for flavor, at the time I had 9 out of 12 very picky eaters.
The 2 serving scoops came in handy when I was trying to entice these picky eaters to try new things.
Here I made a Mickey shape.

Here is the Recipe:
1lb ground beef browned
1/2 cup green pepper chopped
1/2 cup onion chopped
1 can of tomato sauce,add into the meat, onions, and green pepper mixture.
Add 1 can of cut green beans.
1 egg
1/4 cup of milk.
add all ingredients above.
scoop into a 9x11 baking dish and smooth out over bottom.
with instant Mash potatoes make as per recipe on the box for the number of servings.
Scoop out potatoes onto the meat mixture, in any shape you desire. ~Smiles
and sprinkle with cheddar cheese.
~Yum~

Polynesian Resorts Kona Cafe

There is this fabulous Breakfast item I hear about every trip I take to Disney World...
My family doesn't frequent the breakfast menu anywhere when we are on vacation, we rarely wake up in time to even see the menu, before it changes to the lunch menu.
 ~smiles

I have yet to have this fabulous treat but I was able to get a little taste of
Disney World right here in my own kitchen.
Here is how I did it.


Tonga Toast is something I hear people speak of ALL, yes ALL the time.
What is Tonga Toast?
well it is really yummy, I have to tell you I had my doubts.
French toast stuffed with bananna? hmmm

It was wonderful!
I even got 8 out of 10 kids to eat it and they enjoyed it! that is a plus!
a few were even asking to have it again a few days later!
SCORE!
I have a tough time trying to get my kiddos to eat, so anything they like I'm for making it again.Stuffed

Banana French toast... like "Tonga Toast"
  • Four 1″ thick slices sourdough or sweet french bread, cut from an oval loaf
  • 2 large bananas (8 oz each) peeled, halved lengthwise, then crosswise
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla
  • 2 tbsp butter
  • 2 tbsp vegetable oil
  • 1/3 cup granulated sugar mixed with 1 tsp ground cinnamon
  • butter, maple syrup
  1. Cut a 2 to 3″ pocket in one side of each bread slice.
  2. Carefully stuff pockets with 2 pieces of banana.
  3. Beat eggs, milk and vanilla in a shallow dish.
  4. In a large skillet melt butter and oil over medium heat.
  5. Dip both sides of bread into egg mixture. (Don’t let the bread get too soggy)
  6. Fry about 2 minutes per side till lightly browned.
  7. Drain on paper towels on a wire rack.
  8. Serve hot sprinkled with cinnamon-sugar mixture and butter and syrup on the side.
  9. 4 servings
I did not use veg. oil. I used coconut oil!
The hint of coconut gave it a wonderful flavor I really liked the warm bananna flavor with the coconut. I also did not roll it in cin. Sugar, as with lots of kids the syrup provides plenty of this hyper inducing stuff. and they like to drown anything in the sugary syrup.
Over all it was a WONDERFUL breakfast, and I will be going to Kona Cafe to get me a bit of the real deal on my next visit!
